Our Story: A Love Letter to NYC in the Heart of Seattle

Established in 2018, Westman’s Bagel & Coffee was founded as a tribute to classic New York City deli culture. Originally launched by renowned Seattle restaurateur Monica Dimas and baker Molly Westman, our journey began at a humble walk-up window on Capitol Hill with a simple mission: to bring authentic, hand-rolled bagels to the Pacific Northwest.

Today, Westman’s remains a proud woman-owned business led by Sanya and Ankit Sirmorya. Sanya stepped into the role of owner with a vision to preserve the shop’s neighborhood soul while expanding its reach to the Downtown and University District communities.

We believe that there are no shortcuts to a perfect bagel. Our process stays true to tradition:

  • Daily Craft: Every bagel is cold-fermented, hand-rolled, and boiled before being baked from scratch each morning.

  • House-Made Quality: We take immense pride in our in-house schmears and spreads, crafted to pair perfectly with our signature New York-style bagels.

  • Local Partnerships: As a neighborhood fixture, we are proud to serve locally roasted espresso from Caffe Vita, ensuring every visit hits the spot from the first bite to the last sip.
